We associate our kitchen to the body’s seasonal needs and we design our menus taking into account the welfare of our guests in its broadest sense, from introducing the menu to the the post taste, always emphasizing the uniqueness of our flavors.

We committed to the constant study and research as a form of knowing the environment in which we develop our nutritious and creative work.

INGREDIENTS & PRODUCTS

Our cuisine includes two key ingredients that provide great uniqueness to our dishes: algae and seawater.

Seawater:

Rich in valuable elements such as minerals and potassium. Its use in the kitchen is not widespread , therefore those who use it are representatives of the high-end gastronomy: Ferran Adria and the Noma Restaurant in Copenhagen, one of the best restaurants in the world.

Algae:

With a long association with the history of human nutrition, algae provide minerals and vitamins, while stimulating the metabolism and cleansing the body.

The Ingredients of our dishes:

The philosophy is to harness the great diversity and richness offered by this territory: the Mediterranean fish and seafood and the tasty and healthy vegetable given by the garden of this land… In Baeza & Rufete we are committed to adding selected ingredients, especially traditional ones, that enrich our creations and cuisine.
